My ultimate pre-race meal is Tuna Pasta. I know it sounds gross, but stick with me. It has the perfect balance of salty, protein and carb. Plus the sauce is cooked in the time it takes to cook the pasta it's super speedy.
Ingredients:
- Tinned tuna (in oil is yummier) 185g
- Onion x 1
- Garlic cloves x 2
- Tinned tomatoes x 2 or 1 can plus some passata
- Pitted Kalamata Olives
- Capers
- Salt & Pepper
- Pasta
- Chilli flakes (optional)
- Parsley on top
- Parmasean on top
Method:
- Bring a pot of salted water to the boil then add pasta and cook according to cooking instructions.
- Chop onion & garlic
- In a large deep saucepan, add olive oil and fry off onion and garlic for a couple of minutes, until soft
- Add tinned tuna (including some of the oil if using with oil), canned tomatoes, olives, capers and salt & pepper to taste
- Bring to the boil then simmer until thickened
- Drain pasta and add pasta to the sauce, stir until well combined
- Serve with parsley and parmasean.
